The future of unused bread

A new project from the Danish Agriculture Agency wants to develop a machine that will scan unsold bread for mould and bacteria before it is grated, dried and ground to be turned into pasta, crisps, muesli bars and whatnot. This should allow 90% of the bread to be recycled
