Why? The agency has disclosed that rice contains higher levels of the potentially carcinogenic substance known as inorganic arsenic, as revealed by new risk assessments conducted by the European Food Safety Authority. To mitigate this risk, the agency has recommended soaking rice in addition to rinsing it, to reduce the amount of the substance consumed. Inorganic arsenic is usually found in soil, sediments and groundwater and it can pose health risks when consumed in large quantities, particularly to children.
Soak your rice between 15 and 30 minutes before cooking or cook it with extra water that you can remove later, the Danish Veterinary and Food Administration advised
